Jambalaya

Chicken or Shrimp and Sausage Jambalaya

½ lb. sausage cut up

½ lb. chicken breast cut up or peeled shrimp

1 tsp. salt

¾ tsp. pepper

½ tsp. garlic powder

½ tsp. red pepper

2 T. oil

½ cup diced onion

1 cup diced green pepper

½ cup diced celery

1 cup rice

1 can 16oz diced tomatoes

2 ½ cups water.

In dutch oven or pan with cover add oil and fry sausage and chicken, seasoned with salt, pepper, garlic and red pepper until tender.  Add your trinity and sauté 2 more minutes.   Add rice, tomatoes and water.  Bring mixture to boil, stir and then turn heat to medium low.  Cover and simmer for about 20 minutes or until rice is done.
