4 Easy Chicken Dishes

 Tired of trying to figure out what to cook.  Here are four quick and easy gourmet meals made with boneless chicken breast. Step one is the most important part of this recipe process.  You can even get a little creative with the dishes, by adding sauteed zucchini or carrots.   If you are on a low carb diet, just serve with a salad and shake most of the flour off the chicken pieces before cooking.   Pounding the chicken breast is an essential part of this recipe, to keep the mess down place the chicken pieces between 2 pieces of cellophane and lightly pound flat with a mallet or rolling pin.

Lemon Chicken Piccata

First Ingredients

Serves 4-6

4 boneless chicken breasts

1/2 tsp. salt

1/2 tsp. pepper

1 c. flour

1-2 TBSP unsalted butter, divided

1-2 TBSP olive oil

STEP 1

Skillet & tongs or fork needed.

Place the chicken breasts between 2 pieces of plastic wrap, and pound the meat with a meat mallet until the breasts are about 1/2 inch thick.

Combine the flour, salt and pepper in a bowl large enough for dredging the breasts. Dredge each breast.

Heat 2 TBSP of butter and olive oil in a large skillet over medium-high heat. Add the chicken and cook just until brown, about 3 minutes per side. 

REMOVE CHICKEN AND SET ASIDE.

Remaining Ingredients

3 minced garlic cloves

1 c. chicken broth

1/3 c. fresh lemon juice

1/4 c. drained capers, rinsed

2 TBSP chopped fresh flat leaf parsley

1 T. white vinegar

1 tablespoons butter

1 tablespoons olive oil

 Juice of 2 lemons

 3 tablespoons flour

 3 cups chicken broth

 Salt and ground white pepper to taste

2 tablespoons butter

1 tablespoon minced onion

2 tablespoons minced garlic

1 cups light cream (can use milk)

1/4 cup parmesan cheese

1 teaspoon parsley

1/2 teaspoon red pepper flakes

2 T. butter

1/4 Cup Flour

1 Cup Onion, chopped

1 Cup Celery, chopped

1/4 Cup Green Bell Pepper, chopped

1/4 Cup Mushrooms, sliced

1 Tbsp minced garlic

2 cups chicken stock & 1 T. white vinegar

Bonus Recipe: Make Chicken Cacciatore by adding canned diced tomatoes & onions.  Be creative and create your own dish!

Add the garlic, broth, lemon juice, and capers to the same pan. Bring the mixture to a boil over medium-high heat, scraping up the brown bits from the bottom of the pan for extra flavor. Return the chicken to the pan and simmer until sauce is thickened. Mix in remaining butter and serve over pasta.

In skillet you cooked chicken in; add remaining oil and butter.  Whisk in flour and cook for one minute until it starts to bubble or boil.   Add lemon juice and chicken broth and whisk until sauce is mixed.  Add chicken back to pan and reduce to simmer until sauce is thickened to desired consistency. 

Add to skillet 2 TBS butter, onions, and garlic.  Cook 1 minute.

Add cream, cook for 3 minutes until reduced a bit.

Add cheese, parsley, and red pepper flakes.  Stir well.

Add last 1 TBSP butter and stir well.   Return chicken to pan and coat with sauce.

In skillet you cooked chicken in add remaining oil and butter.  Whisk in flour, Trinity (onion, celery, bell pepper), mushroom, garlic and cook over low heat until flour starts to brown .    Add vinegar and let bubble 20 seconds, then add chicken stock and whisk.   Return chicken to pan and reduce heat to simmer and simmer until sauce is thickened.


Tips & Variations:    this chicken picata is made alcholol free, but you can omit the vinegar and add 1/4 cup white wine and 1/4 cup less on the chicken broth.   The Chicken Alfredo can also be made low fat with 1 or 2% milk.
