Califlower Soup – Low Carb Mock Potato Soup
Low Carb Califlower Soup that taste like creamy potato soup is not only very low in carbs it’s delicoius. Light, creamy, delicious and very easy to make.
1 head of califlower
3 cups of chicken stock
1 bay leaf
1 4 oz cube cream cheese (softened)
1/2 cup chopped raw bacon
1/2 cup chopped onion
pinch of salt
black pepper to taste
Wash and chop califlower and cook over medium heat in chicken stock with bay leaf added until soft and tender. While califlower is cooking, in saute pan cook bacon until browned and add onion and saute all until soft. With slotted spoon remove half the califlower to a blender or food processor and add cream cheese. Process until smooth. Reduce remaining califlower and stock to about 1 cup and add the bacon and onions and the blended cream cheese califlower mixture. and heat through. Add salt and pepper to taste. Serve topped with shredded cheddar and parsley.
