Chicken Salad Sandwiches

This Chicken Salad is great for Weddings or Wedding Showers.  When I catered it was the most requested by brides.  Served in mini croissants, cream puff shells, or bouches, they make great Horsdevoures.   The craisins give them a nice sweet chewiness when you bite into them and the red color against the white makes them pretty and appetizing.

 Chicken Salad on Croissant

2 cups chopped cooked chicken

1 cup sliced celery

½ cup minced dill pickle (you can use dill pickle relish)

½ cup minced red onion

1/3 cup chopped walnuts (optional)

1/2 cup craisins (dried cranberries)
½ cup mayonnaise

1 tsp. mustard

1 tsp. sugar

½ tsp. garlic powder

½ tsp. black pepper

salt to taste

Croissants

 


In large bowl, stir together chicken, celery, dill pickle, onion and walnuts.  Add in remaining ingredients and mix well.  Refrigerate at least an hour before serving.   Slice croissants and line with green leaf lettuce and 2 tablespoons of chicken salad.
