Fresh Broccoli Salad (Can make it low fat too!)

Fresh Broccoli Salad



4 cups broccoli florets cut into bite size pieces


½ cup cooked crumbled bacon


½ cup red onion


1 cup shredded cheddar cheese


1 cup mayonnaise (for lowfat you can use lowfat mayo (or) FAGE greek yogurt plus 1 T. mustard)


2 T. apple cider vinegar


½ cup sugar (can make low sugar too, use 1 T. sugar instead)


½ cup diced tomatoes



Rinse broccoli in cold water and drain.  Put in large bowl and add bacon, onion, and cheese.  In small bowl stir together mayonnaise, vinegar and sugar until well mixed.   Add to broccoli mixture, stirring well.  Gently toss in tomatoes.  Chill at least 30 minutes before serving.
