1 lb ground white turkey or diced turkey breasts
½ cup diced celery
½ cup diced yellow onion
1 cup low sodium chicken broth
8 large lettuce leaves
½ tsp red pepper flakes (optional)
Seasonings, such as cajun, garlic, pepper, (ginger if you want it to taste Asian), but you can add seasonings to your taste. You can even season Mexican and use a tsp of salsa on each for variety.
In medium size non-stick skillet, sauté ground turkey with, seasoning, onion and celery until turkey is done. Add chicken broth and simmer for 5 minutes or until liquid is reduced. Divide into 4 servings and spoon onto lettuce leaves. To eat, just wrap lettuce around mixture. You can add soy sauce to meat mixture or dip wrap in sauce with each bite. Delicious!
