Mama’s Old Fashioned Oatmeal Cookies

Mama’s Old Fashioned Oatmeal Cookies


1 ½ cups shortening

2 cups packed brown sugar

3 eggs

2 T. vanilla

2 ¼ cups flour

1 ½ tsp. salt

1 ½ tsp. baking soda

1 tsp. cinnamon

¼ tsp. nutmeg

4 ½ cups uncooked oats

1 cup chopped nuts

1 cup raisins


Cream shortening and brown sugar.  Beat in eggs and vanilla until fluffy.  In separate bowl add flour, salt, soda, cinnamon and nutmeg and mix well.  Gradually add flour mixture to sugar mixture until well blended.  Stir in oats, nuts and raisins.   Drop by tablespoons on to baking sheet and bake in preheated 350 degree oven for 12 minutes.  Do not overbake. 

TIP:  Like your raisins soft?   Boil your raisins and drain prior to adding to your cookie dough, so that you will have a softer cookie.    

    Oatmeal cookie dough dries out as it sits, so keep it covered in plastic wrap until you bake.  Also baking cold cookie dough will produce a chewier cookie.  You can prep up your cookies before hand by using a small ice cream scoop to portion the dough.  Then mash down half way and freeze on cookie sheet.  When frozen you can put them in a freezer bag until ready to bake.  Bake at the same time as above.
