Southern Pineapple Cake
2 cups sugar
2 cups flour
1 tsp. soda
1 tsp. salt
¾ cup oil
2 eggs
1 large can crushed pineapple
Preheat oven to 325. Dump and mix together. Pour in to 9” springform pan and bake for 40 – 50 minutes. Let cool 5 minutes remove springform and ice while cake is still warm. Ice with cream cheese frosting.
Cream Cheese Frosting
1 stick butter or margarine
8 oz package cream cheese
2 cups powdered sugar
1 tsp. vanilla
Sliced almonds
Beat together all ingredients until creamy and pour over cake. Sprinkle sides of cake with sliced almonds.
