Sweet Potato Pie

Sweet potato pie

4 Sweet Potatoes (enough to make 1 ½ cups mashed)

1 stick of butter (melted)

1 cup sugarSweet Potato Souffle

2 eggs (separated)

1 small can milk

1 tsp. vanilla

1 tsp. Pumpkin pie spice

Boil sweet potatoes until tender.  Remove and peel and mash.  Add remaining ingredients, except egg whites, and mix well. 

In separate cold bowl, beat egg whites until stiff peaks form.  Fold into pie mixture, then pour mixture into unbaked pie crust. 

Bake at 350 until done for about 40 minutes or until knife comes out clean when inserted.
