Sweet Potato Souffle

In the south it’s all about sweet potatoes at Thanksgiving.
Enjoy my favorite recipe, it’s almost a dessert too!

Sweet Potato Soufflé

3 cups mashed sweet potatoes

½ tsp. salt

2 eggs, beaten

1 cup sugar

½ cup milk

1/3 cup butter, melted

Topping:

1 cup brown sugar

1/3 cup flour

1 cup chopped pecans

¼ cup butter, melted

1 cup grated coconut

Mix together sweet potatoes, salt, eggs, sugar, milk and butter until well mixed.  Spread in greased 9×13 in glass dish.  Mix together topping ingredients and spread over potatoes.  Bake in a 350 degree oven for about 30 minutes.
