Healthy Whole Wheat Bread

½ cup water warm water*

2 packs yeast or 2 T

5 cups water

6 cups Whole wheat flour

6 cups white flour

2 T. Salt

2/3 cup oil (I use olive oil or butter)

2/3 cup honey

Combine warm water and yeast; let stand for 10 minutes.  *(Instant yeast just add yeast to dry ingredients and add your oil, and honey to 5 ½ cups warm water and add to dry ingredients.)

Combine flours and salt (*and dry instant yeast) in mixer or large bowl, add liquid slowly in mixer or bowl and stir until well mixed.  Mixer with dough hook on low speed beat for 10 minutes or by hand with oiled hands until smooth about 75-100 strokes.  Shape into loaves and put in pans.  Soften some butter and rub on tops.  Cover and let rise until double 30 or 40 minutes.  Place loaves in cold oven; turn temperature to 350 degrees and bake for 30 to 40 minutes or until golden brown.  Remove from pans; cool on wire racks.
